The ‘Bees Knees’ Cocktail was created during the Prohibition era with its name originating from use of the popular phrase ‘Bees Knees’ meaning something excellent. The drink was initially invented during the 1920s by Frank Meier - a bartender working at the Ritz Hotel in Paris. Although similar to a ‘Gin Sour’ which is composed of gin, lemon juice and sugar, the ‘Bees Knees’ is slightly darker in colour through substituting honey for sugar and creating a much richer drink.
Honey is often seen as a healthier alternative to the white sugar found in most cocktails. As it contains both fructose as well as glucose, unlike white sugar which is composed entirely of glucose, it naturally tastes much sweeter. However, it also has a lower glycaemic index than white table sugar, hence causing less of a spike in blood sugar levels when consumed. Therefore, not only is the ‘Bees Knees’ much yummier, but it is also slightly better for you than its counterpart, the ‘Gin Sour’!

Honey syrup Recipe:
Ingredients for honey syrup (enough for six ‘Beeble Bees Knees’)

½ cup Beeble Honey

½ cup water
Method:

Add the honey and water to a pot and bring to boil.

Reduce the heat and simmer for a few minutes.

Allow the syrup to cool and then store in a fridge.

Beeble Bees Knees Cocktail Recipe
Ingredients for the ‘Beeble Bees Knees’ Cocktail

75ml of Beeble Honey Whisky
-
20ml of fresh lemon juice
-
30ml of honey syrup
-
Ice
-
Sprig of rosemary
Method:

Pour the Beeble Honey Whisky, lemon juice, honey syrup and ice into a shaker.

Shake well and then pour over ice into a rocks glass

Garnish with a sprig of rosemary.
